Smoked Potato Salad

Ingredients

Potatoes
  • 2 lbs russet potatoes
  • 2 Tbsp extra virgin olive oil
  • 2 tsp kosher salt
  • 2 tsp black pepper
  • 2 tsp smoked paprika
Dressing
  • 1/2 red onion
  • 1 Tbps fresh parsley, minced
  • 1/2 cup sour cream
  • 1/2 cup mayo
  • 1 tsp dijon mustard
  • 1 Tbsp lemon juice
  • 2 Tbsp green onions
  • 1 tsp kosher salt
  • 2 tsp black pepper

Directions

  1. Turn on pellet grill to 275°F
  2. Begin by slicing potatoes lengthwise, around 3/4 inches thick
  3. Put the sliced potatoes in a bowl and add olive oil, salt, pepper, and paprika. Toss to coat evenly.
  4. Place the potatoes directly on the grill grate and smoke for 15 minutes. Flip, then repeat cooking time until done.
  5. Once cooked, remove from cooker and allow to cool.
  6. Once cooled, cut into 1-inch pieces.
  7. In a large bowl, add red onion, parsley, green onion, mayo, sour cream, dijon mustard, salt, pepper, and lemon juice.
  8. Add the potatoes and combine the mixture, making sure to be careful to keep the potatoes whole.
  9. Refrigerator for 30-45 minutes, then enjoy!
