Smoked Potato Salad
Ingredients
Potatoes
- 2 lbs russet potatoes
- 2 Tbsp extra virgin olive oil
- 2 tsp kosher salt
- 2 tsp black pepper
- 2 tsp smoked paprika
Dressing
- 1/2 red onion
- 1 Tbps fresh parsley, minced
- 1/2 cup sour cream
- 1/2 cup mayo
- 1 tsp dijon mustard
- 1 Tbsp lemon juice
- 2 Tbsp green onions
- 1 tsp kosher salt
- 2 tsp black pepper
Directions
- Turn on pellet grill to 275°F
- Begin by slicing potatoes lengthwise, around 3/4 inches thick
- Put the sliced potatoes in a bowl and add olive oil, salt, pepper, and paprika. Toss to coat evenly.
- Place the potatoes directly on the grill grate and smoke for 15 minutes. Flip, then repeat cooking time until done.
- Once cooked, remove from cooker and allow to cool.
- Once cooled, cut into 1-inch pieces.
- In a large bowl, add red onion, parsley, green onion, mayo, sour cream, dijon mustard, salt, pepper, and lemon juice.
- Add the potatoes and combine the mixture, making sure to be careful to keep the potatoes whole.
- Refrigerator for 30-45 minutes, then enjoy!
