Pineapple Coleslaw

  • 1 lb shredded red and green cabbage
  • 1 grated carrot
  • 1 cup mayo
  • 1/4 cup sugar
  • 1 Tbsp fresh horseradish
  • 1/2 Tbsp dry mustard
  • 1/2 Tbps white pepper
  • 1/4 tsp kosher salt
  • 1/4 tsp garlic powder
  • 1/4 tsp celery seed
  • 1/2 cup crushed pineapple
  • 1/2 diced white onion

Directions

  1. Toss the cabbage, carrot, and onion in the bowl with the salt and set aside. The salt will help the cabbage sweat and absorb the dressing.
  2. Mix mayo, sugar, horseradish, dry mustard, white pepper, garlic powder, and celery seeds in a separate bowl.
  3. Add the dressing into the cabbage mixture and mix well.
  4. Add the crushed pineapple and some of the juice from the can.
  5. Chill until serving time. Best to rest for a few hours before serving.

Note: For ease, feel free to purchase the shredded cabbage and carrot mixture from the grocery store. Most bags are 1 lb.

Make sure to add to a pulled pork sandwich.
