Ingredients

Pizza
  • Large tortilla wraps
  • Basil pesto sauce
  • Marinara sauce
  • White sharp cheddar cheese, shredded
  • Parmesan cheese, shredded
  • Olive oil
  • Dried basil
  • Dried mint
  • Jim Beam® Bourbon
Toppings
  • Pepperoni, diced
  • Red bell pepper, diced
  • Green bell pepper, diced
  • Red onion, diced
  • Olive tapenade
  • Capers, diced

Directions

  1. Turn on the pellet grill to 350°F
  2. Dice all of the pizza topping and mix in a large bowl.
  3. Place all of the toppings in a boat of aluminum foil and seal tight
  4. Cook the pizza toppings in the foil for 20-25 minutes
  5. While the toppings are cooking, prepare the sauce and pizzas.
  6. Mix together the basil pesto and marinara sauce
  7. Start by laying out 3-4 tortilla wraps and spread a thin layer of the sauce
  8. Add the cooked ingredients
  9. Cover with the sharp cheddar cheese, then sprinkle on some of the parmesan cheese.
  10. Sprinkle a little olive oil on top followed by a spritz of Jim Beam® Bourbon.
  11. Place directly on the pellet grill grate or a pizza stone
  12. Cook until cheese is melted and crusts are browned
  13. Garnish with basil and mint.
