Ingredients

  • Plate of beef ribs
  • Hot sauce, olive oil, or Jim Beam® Bourbon
  • Coarse Kosher Salt
  • Coarse Black Pepper
  • Granulated Garlic

Directions

  1. Turn on pellet grill to 275°F
  2. If desired, trim some of the excess fat deposits on top of the plate, but not all of it.
  3. Do not remove the membrane on the bottom. This will keep the bones attached to the meat.
  4. Cover the plate in the desired rub binder (hot sauce, olive oil, or Jim Beam® Bourbon)
  5. Rub all sides with the salt, pepper, and garlic
  6. Let rest for 20-25 minutes
  7. Place on pellet grill with the bones down.
  8. Smoke for 6-7 hours, or until the internal temp gets to around 205°F. Take a temp probe and poke straight down between the bones. When the probe goes through the membrane easily, they are done.
  9. Remove from the pellet grill and let rest for 20-30 minutes. Best to rest in a cooler.
